Fresh and delicious, a notorious Japanese cuisine staple, they blend perfectly with the Ecuadorian ingredients Junior adds to each: who has seen sushi with sacha inchi, cocoa, lupin beans or coffee? The exquisite synergy that lies in this “antithesis” of flavors is something to behold, all conjured with an excellent local catch and a variety of specialty sauces that accompany each dish. Shibumi perfectly embodies the Japanese meaning of the name: beauty in simplicity.
